Mini Pie Monday


Mini Mint Pudding Pie

Recipe: 
I followed the "Lucky You" Mint Pie recipe, but I altered it a bit.  I left out the food coloring, and only added the peppermint to some of the pudding (because I detest mint in any form, crazy I know).  Because I made mini pies, I had tons of pudding and chocolate left over.  What did I do with that, you ask?  First, I made a graham cracker crust.  For that, you need:

1 stick (8 tablespoons) of butter
1/2 cup of sugar
1 package of graham crackers

Pulverize the graham crackers with a rolling pin (wow, that sounds so vicious!), melt the butter in the microwave, then mix it all together.

Next, just layer the graham cracker crust in a dish, layer on the chocolate, then the pudding.  Now you just put it in the refrigerator until it cools and thickens.  After a while, you can take it out and add whipped cream and chocolate chips on top of it, and it's ready to eat!  I have no photos of this yet, since it is still in the fridge, but I was sneaky and tried a little bit of it.  It was delicious!

Mini Pie Monday: Peach Pie






Mini Peach Pie

Ingredients:
One package of 9 inch round pie crusts
One can of peaches, drained
One package of whipped cream

Cut out the pie crust, spoon the peaches in (no more than three per pie), then place on the top and bake!  8 to 10 minutes later and taadah! Mini peach pies for four!

I know I said I was gonna make my own pie crust, but school got a bit ridiculous and I had to work overtime and the pre-made crust just made it so easy.

Thanks Mandy for suggesting peach mini pies, peaches are one of my favorite fruits but I never had them in pie form before today!  I really enjoyed this pie, although I still want to make my own pie crust.

See my lovely pie maker?  I should've cleaned it before I took a picture, oh well.  I haven't thought of a name yet though, any ideas?

Mini Pie Monday

So guess what I bought about a week ago?  A Breville Mini- Pie Maker!  It makes the cutest little pies I ever did see!  For Superbowl Sunday I made mini pizza pies (which were a huge hit), and today I made mini cherry pies.  I love mini pies because they are the perfect portion size, and I can make super healthy and quick meals (as well as snacks) if I so please.

So I figured I would share my mini pie-baking adventures with you all!

Here's todays mini pie: Quick and Easy Cherry Pie


*will make 4 mini pies*

Ingredients:
Store-bought or homemade pie crust (enough to make a covered 9 inch pie)
One can of cherry pie filling (store-bought or homemade)
Vanilla ice cream

It's pretty simple; just cut out the crust to fit in the pie maker, spoon some cherry filling into the pie crust, then close it and wait about 12 to 15 minutes.  After you take it out and let it cool for a while, place it on a cute mini plate with a scoop of ice cream and enjoy!

Now honestly, I did not care for the pie crust I used, I think I'm going to make it myself next time.  I also tried to make some chocolate pie, but I left it in a bit too long and it exploded it in a boiling mess of pudding goo.
